The Recipe
INGREDIENTS:
For the pastry:
250 g plain flour
125 g block of margarine
98ml water
The filling:
2 eggs
195 ml milk
75g cheddar cheese, grated
1/2 onion
6 - 9 cherry tomatoes (optional)
1 or 2 slices of ham ( optional)
4 mushrooms (optional)
2- 3 florets of broccoli( optional)
Method
1) Light the oven to Gas Mark 5/190
2) Put the flour and margarine into the mixing bowl and rub together to form small crumbs.
3) Add the water and mix together.
4) Flour the worktop surface and roll out the pastry to a thin layer. Using a pallet knife or a shape cutter, cut out reasonably sized circles to fit the moulds and place into the moulds and up the sides. Push down to flatten.
5) In the jug of milk crack the eggs and beat gently. Add the cheese and mix using a fork or whisk Add a pinch of salt
6) Chop up the ham, mushrooms , onions and broccoli if desired and place evenly into the quiches.
7) Pour the egg, milk and cheese mixture evenly into the pastry moulds. Do not over fill!
8) Bake for 15 minutes until golden brown.
